Cider Base

1. Simmer the cider

Pour 3 cups apple cider into a small saucepan. Add 2 cinnamon sticks, 1 tablespoon thinly sliced fresh ginger, and 2 tablespoons light brown sugar. Warm over medium-low heat until just below a simmer (bubbles forming at edges), about 6–8 minutes, stirring to dissolve the sugar.

2. Infuse and cool

Turn heat off and allow the cider to steep with the cinnamon sticks and ginger for 10 minutes to infuse. After steeping, remove and discard the cinnamon sticks (leave the ginger slices if you like stronger bite or fish them out for a smoother drink). Let the cider cool to room temperature, about 20–25 minutes, or speed the process in the refrigerator for 10–15 minutes.

3. Add lime

Once the cider is cooled, stir in 1/2 cup fresh lime juice. Taste and adjust sweetness — if you prefer sweeter, add up to 1 additional tablespoon brown sugar and stir until dissolved.

Ginger & Soda

4. When ready to serve, gently stir the chilled ginger beer (3 cups) to combine. If you left ginger slices in the cider and want more ginger presence, briefly muddle 1–2 of the slices in the bottom of a pitcher before adding ginger beer. Do not boil or carbonate—ginger beer should remain fizzy and cold.

5. Combine liquids: in a large pitcher or individual glasses, pour the cooled cider-lime mixture and slowly add the chilled ginger beer to preserve carbonation. Stir once gently to blend.

Garnish & Finish

6. Prepare glasses: fill 4 highball glasses with 1–2 ice cubes each (or crowd with ice to keep cold). Add 1–2 lime wheels per glass and a mint sprig.

7. Pour and finish: divide the combined cider and ginger beer evenly among the 4 glasses (about 1¼ cups / ~300 ml per glass). Sprinkle a light pinch (about 1/64 to 1/32 tsp) of ground cinnamon over the top of each glass for aroma.

8. Garnish: smack remaining mint sprigs between your hands to release oils and tuck into each glass. Serve immediately while ginger beer is still fizzy.
