Brewed Coffee (per 12-cup carafe)

1. Measure and grind beans

Weigh or measure 0.75 cups (about 150 g) of whole coffee beans for a 12-cup carafe. Grind to a medium-coarse setting (similar to coarse sand) if using an automatic drip brewer; use a medium grind for a standard drip machine.

2. Prepare the brewer

Fill the coffee maker's water reservoir with 12 cups (approximately 2.8 liters) of filtered water. Place a clean paper filter (or reusable mesh filter) in the brew basket.

3. Add grounds and brew

Add the ground coffee to the filter, level the grounds gently. Start the brew cycle. For pour-over, use a 1:17 coffee-to-water ratio and pour in stages. For an automatic brewer expect 8–12 minutes depending on machine.

4. Serve and keep bottomless

When brewing finishes, transfer coffee to an insulated carafe to maintain temperature without over-extracting on a hot plate. Keep fresh carafes ready so guests can refill continuously (bottomless service). Replace carafes when flavor begins to decline (after ~30–45 minutes).

5. Cleaning between brews

Discard used grounds and rinse the brew basket. Wipe the carafe and warmers between batches to avoid burnt flavors. Brew fresh every 30–45 minutes for continuous bottomless service.

Optional Add-ins (per serving)

6. Offer milk, cream, sugar, simple syrup, and other sweeteners on the side. For each cup (approximately 8 fl oz), provide 1–2 tbs milk or 1 tbs half-and-half and sugar/simple syrup to taste. Stir into hot coffee until combined.

7. For iced service, brew double-strength coffee (use 1.5x grounds) and cool quickly; serve over ice with optional milk or sweetener.
