Burger Patties

    Mix and shape

    In a mixing bowl, combine the ground beef, softened cream cheese, minced garlic, kosher salt, and black pepper. Gently mix until just combined — avoid overworking. Divide and shape into a single 1/2-pound patty (or two smaller patties if preferred). Press a slight dimple in the center of the patty to promote even cooking.

    Cook

    Preheat a cast-iron skillet or grill over medium-high heat. When hot, add a small amount of oil to the pan or oil the grill. Cook the 1/2-pound patty 4–5 minutes per side for medium (adjust time 1–2 minutes for desired doneness), flipping once. Internal temperature should read 160°F (71°C) for medium-well; reduce slightly if you prefer less done. If using two smaller patties, reduce cook time to ~3–4 minutes per side. After flipping, spoon any rendered juices over the top once to help melt the cream cheese into the meat.

Green Goddess Dressing

    Blend dressing

    In a small bowl or mini food processor, combine mayonnaise, Greek yogurt, parsley, chives, tarragon, lemon juice, anchovy paste (if using), minced garlic, salt, and pepper. Pulse until herbs are finely chopped and the mixture is smooth. While pulsing or whisking, drizzle in the olive oil to emulsify. Taste and adjust salt, pepper, or lemon juice. Refrigerate until assembly.

Caramelized Onions

    Cook onions slowly

    Heat a skillet over medium-low. Add butter and olive oil. Once butter melts, add the thinly sliced onion and salt. Cook, stirring occasionally, for 20–25 minutes until deep golden and soft. If onions are browning too fast, reduce heat. Stir in brown sugar during the last 5 minutes to accelerate and deepen caramelization. Remove from heat and keep warm.

Assembly

    Toast buns: Butter the cut sides of the buns and toast in a skillet or under a broiler until golden, about 1–2 minutes.

    Spread about 1 tablespoon of Green Goddess dressing on the bottom bun.

    Place the cooked patty on the dressed bottom bun.

    Top the patty with 2 tablespoons Pickapeppa Sauce (mild), a generous spoonful (about 2–3 tbs) of caramelized onions, and 2 slices of tomato. Add lettuce if using.

    Spread a little extra Green Goddess on the top bun if desired, close the burger, press gently, and serve immediately.
