Preparation
Preheat the Oven
Preheat your oven to 325°F (160°C).
Prepare the Cream Mixture
In a medium saucepan, combine the heavy cream, vanilla extract, and salt. Heat over medium heat until it just begins to simmer. Remove from heat.
Whisk the Egg Yolks
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Caramelize
Using a kitchen torch, carefully caramelize the sugar until it forms a crispy top. If you don't have a torch, place the ramekins under the broiler for 2-3 minutes, watching closely to avoid burning.
