Marinate Chicken
Marinate the Chicken
In a bowl, combine soy sauce, minced garlic, grated ginger, brown sugar, and black pepper. Add chicken thighs, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.
Prepare Breading

In a shallow dish, combine all-purpose flour, cornstarch, salt, paprika, garlic powder, and black pepper. Mix until well combined.
Pickle Chili
Prepare Pickled Chili
In a small saucepan, combine sliced chilies, white vinegar, sugar, and salt. Bring to a boil, then remove from heat. Let it cool and refrigerate until ready to serve.
Fry Chicken
Heat Oil and Fry Chicken
In a large pot or deep fryer, heat vegetable oil over medium-high heat. Remove chicken from marinade and dredge each piece in the flour mixture, shaking off excess. Carefully place chicken in hot oil and fry for 7-8 minutes on each side or until golden brown and cooked through. Drain on paper towels.
