Fries

Garlic Aïoli

Method

Preparing the Cajun Fries

1

Cutting the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to form fries.

2

Soaking the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

3

Frying the Fries

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the fries and dry them thoroughly. Fry the potatoes in batches until golden and crispy, about 4-5 minutes per batch.

4

Seasoning the Fries

Remove the fries from the oil and drain on paper towels. While they are still hot, sprinkle with Cajun spice blend to taste.
