Prepare the Venison

Season the venison steak with salt and black pepper on both sides.

Sear the Steak

In a skillet, heat the olive oil over medium-high heat. Add the venison steak and sear for 4-5 minutes on each side, or until cooked to your desired doneness. Remove from skillet and let rest.

Sauté the Vegetables

In the same skillet, add the sliced onion and mushrooms. Sauté until the onions are translucent and the mushrooms are browned, about 5-7 minutes.

Assemble the Sandwich

Slice the cooked venison steak thinly. Split open the ciabatta rolls and spread mustard on the inside of each roll. Layer the sliced venison, sautéed onions and mushrooms, and top with Swiss cheese.

Melt the Cheese

Return the sandwiches to the skillet and cook over low heat, covered, until the cheese is melted, about 2-3 minutes.

Garnish and Serve

Sprinkle with chopped parsley before serving. Enjoy your delicious venison melt!
