1. Prepare the Dipping Sauce
In a small bowl, mix soy sauce, rice vinegar, sesame oil, and chili flakes. Set aside.
2. Make the Tempura Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the ice-cold water, stirring gently until just combined. Do not overmix; a few lumps are okay.
3. Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).
4. Fry the Prawns
Dip each tiger prawn into the tempura batter, allowing excess to drip off. Carefully place them in the hot oil in batches, frying for about 2-3 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels.
5. Serve
