Method
Alligator and Marinade
Trim and Cube
Trim any silver skin or excess fat from the alligator tail. Pat dry with paper towels and cut into 1-inch cubes so pieces are uniform for even cooking.
Marinate
In a bowl, whisk together buttermilk, Worcestershire sauce, hot sauce, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Add the alligator cubes, stir to coat, cover, and refrigerate for 1 to 4 hours (minimum 1 hour to tenderize; up to overnight for more flavor).

Prepare Breading
In a shallow wide bowl or rimmed sheet pan, combine all-purpose flour, cornstarch, yellow cornmeal, 1 tsp paprika, 1/2 tsp cayenne, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried oregano, 1/2 tsp dried thyme, 1/2 tsp black pepper, and 1 1/4 tsp kosher salt. Whisk thoroughly to evenly distribute spices. Set aside.
Dredge
Remove alligator from marinade, letting excess drip back into the bowl. Working in a single layer, toss pieces in the breading mixture until well coated, pressing lightly so the mixture adheres. Place breaded pieces on a wire rack set over a sheet pan and let rest 10–15 minutes to help the coating set.
Cooking and Garnish
Heat Oil
Pour neutral frying oil into a heavy skillet or Dutch oven to a depth of about 1" (approximately 48 ml per small pan; increase proportionally for larger pans). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of breading — it should sizzle and brown within 45–60 seconds.
Fry in Batches
Fry the breaded alligator in small batches so pieces do not touch, 2.5–4 minutes per batch depending on piece size, turning once, until golden brown and internal temperature reaches 145°F (63°C). Do not overcrowd the pan; adjust heat as needed to maintain 325–350°F during cooking.
Drain and Finish
Using a slotted spoon or spider, transfer cooked pieces to a paper towel–lined sheet pan. Immediately dot with the 1 tablespoon unsalted butter while hot and toss gently so butter melts into the crust. Sprinkle with chopped fresh parsley and a squeeze of lemon to finish.
Serve

Make Remoulade
Combine mayonnaise, Dijon mustard, Creole mustard, 1/4 tsp paprika, 1/2 tsp hot sauce, chopped capers, lemon juice, 1/4 tsp salt, and 1/4 tsp black pepper in a small bowl. Whisk until smooth. Chill at least 15 minutes to let flavors meld. Serve alongside fried alligator.
