Blackened Redfish

Prepare the fish

Pat redfish fillets dry with paper towels. Brush both sides lightly with olive oil (about 2 tbs total).

Make blackening seasoning

Combine paprika, smoked paprika, salt, black pepper, garlic powder, onion powder, dried thyme, and cayenne pepper in a small bowl and mix thoroughly.

Season fillets

Generously coat both sides of each fillet with the blackening seasoning, pressing gently so the spice mix adheres.

Cook fish

Heat a large heavy skillet or cast-iron pan over medium-high heat until very hot. Add a light drizzle of oil if needed. Place fillets skin-side down (if skin-on) and sear for 3-4 minutes without moving, until a dark crust forms. Flip and cook 2-4 more minutes until fish is opaque and flakes easily (internal temp ~145°F/63°C). Remove from pan and keep warm.

Rice

Rinse rice under cold water until water runs clear. In a medium saucepan bring 4 cups water (or stock) to a boil with 1 tsp salt and 1 tbs butter. Add rice, stir once, reduce heat to low, cover and simmer for 18 minutes. Remove from heat and let rest, covered, 5 minutes. Fluff with fork before serving.

Steamed Broccoli

Bring a pot of water with a steamer basket to a simmer. Add broccoli florets, cover, and steam 4-6 minutes until bright green and tender-crisp. Season with a pinch of salt and a squeeze of lemon if desired.

Lemon Butter (optional topping)

In a small saucepan over low heat, melt 4 tbs butter. Stir in lemon juice, lemon zest, salt, and black pepper. Warm gently until combined, do not boil. Keep warm until ready to drizzle over fish.

Mango Salsa (optional topping)

Combine diced mango, red bell pepper, red onion, cilantro, lime juice, salt, and minced jalapeño in a bowl. Stir gently and let sit 10 minutes to meld flavors. Taste and adjust lime or salt as needed.

Tuscan Salsa (optional topping)

Toss quartered cherry tomatoes with minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Let sit 5–10 minutes to macerate. Serve at room temperature.

Crawfish Cream Sauce (optional topping)

In a skillet melt 2 tbs butter over medium heat. Add chopped shallot and cook 2–3 minutes until softened. Add minced garlic and cook 30 seconds. Sprinkle in 1 tbs flour and stir to form a roux, cooking 1 minute. Gradually whisk in 1 cup cream or half-and-half until smooth. Bring to a gentle simmer and cook 2–3 minutes to thicken. Stir in cooked crawfish tails, Creole seasoning, lemon juice, and salt. Warm through 1–2 minutes, then finish with chopped parsley. Adjust seasoning to taste.

To Assemble

Portion rice onto four plates (about 1/2 cup cooked rice per serving or adjust to preference). Place a blackened redfish fillet over the rice on each plate.

Top each fillet with one chosen sauce or salsa: drizzle 1–2 tbs lemon butter, or spoon 1/4–1/2 cup mango salsa, or 1/4 cup Tuscan salsa, or ladle 1/4 cup crawfish cream sauce over the fish.

Serve with steamed broccoli (about 1 cup per plate) on the side. Garnish with extra lemon wedges or chopped parsley if desired.
