Make a blond roux
In a heavy-bottomed skillet or Dutch oven over medium heat, melt the butter with the vegetable oil. Add the flour and whisk continuously. Cook the roux for about 6–8 minutes, stirring constantly, until it turns a deep tan/blond and gives off a nutty aroma. Do not let it burn; reduce heat if necessary.

Incorporate stock and tomato paste
Stir the tomato paste into the vegetable-roux mixture and cook for 1 minute. Gradually whisk in the seafood or chicken stock until smooth and no lumps remain. Bring the mixture to a gentle simmer.
Simmer to thicken
Reduce heat to low and let the sauce simmer gently, uncovered, for 10–12 minutes, stirring occasionally, until it thickens to a stew-like consistency that will coat a spoon.
Add crawfish
Add the cooked crawfish tails to the simmering sauce and stir to combine. Cook just long enough for the crawfish to heat through, about 2–3 minutes — overcooking will make them tough.
Seasoning & Finish
Season and taste
Stir in the Cajun or Creole seasoning, Worcestershire sauce, hot sauce, salt, black pepper and sugar (if using). Taste and adjust seasoning as needed. If the étouffée seems too thick, add up to 1/2 cup additional stock or water to loosen to desired consistency.
Finish with herbs and file
Remove from heat. Stir in the chopped parsley and sliced green onions. If using, sprinkle file powder and stir — note that file will thicken slightly as it sits. Squeeze a little lemon over the étouffée to brighten flavors just before serving.
