Shrimp
Prep shrimp
Pat the shrimp dry with paper towels. Season evenly with 1 tsp kosher salt, 1/2 tsp black pepper, 1 tsp paprika, 1/2 tsp garlic powder, and 1/4 tsp cayenne (if using). Set aside for 5 minutes.
Set up dredging stations
Place the flour and cornstarch mixture in a shallow bowl and mix to combine. In a second shallow bowl whisk together the 2 beaten eggs and 1/2 cup buttermilk. In a third shallow bowl combine panko breadcrumbs and 1/4 cup grated Parmesan.
Working in batches to avoid crowding, dredge each seasoned shrimp first in the flour/cornstarch mixture, shaking off excess; then dip into the egg-buttermilk mixture; finally press into the panko-Parmesan so each shrimp is evenly coated. Place coated shrimp on a wire rack and let rest 5 minutes to set the crust.
Fry shrimp
Pour neutral oil into a large heavy skillet (or Dutch oven) to a depth of about 1/2 inch (approximately 1 cup). Heat over medium-high until oil registers 350°F (175°C) or a small pinch of panko sizzles and browns in ~20 seconds. Fry shrimp in a single layer in batches (do not overcrowd) for 1.5–2 minutes per side or until golden brown and internal temperature reaches 120–130°F. Use a slotted spoon or tongs to transfer cooked shrimp to a paper-towel-lined plate or wire rack. Keep warm in a 200°F oven while finishing remaining shrimp.
Waffle Fries
Cook the frozen waffle fries according to package directions for oven baking. For extra crispness, preheat oven to 425°F (220°C). Toss the frozen fries with 1 tbsp olive oil, 1 tsp salt, and 1/4 tsp black pepper on a rimmed baking sheet in a single layer.
Bake for 18–25 minutes, flipping once halfway through, until golden and crisp. Adjust time depending on fries and oven. Remove from oven and keep warm.
Dipping Sauces
Spicy fry sauce
In a small bowl combine 1/2 cup ketchup, 1/4 cup mayonnaise, and 1 tsp hot sauce. Stir until smooth. Taste and adjust hot sauce or mayonnaise to preference. Serve chilled or at room temperature.
