Ahi Tuna & Marinade

Pat the ahi tuna steaks dry with paper towel. In a shallow dish, combine 3 tbs soy sauce, 1 tbs sesame oil, 1 tsp rice wine vinegar, 1 tsp grated ginger, 1 tsp minced garlic and 1 tsp black pepper. Add the tuna and turn to coat. Marinate at room temperature for 10–15 minutes (or up to 30 minutes in the refrigerator).

Pat off excess marinade, leaving a thin glaze. Sprinkle 1 tsp sesame seeds on both sides of the tuna, pressing gently to adhere.

Heat a skillet (preferably cast iron) over high heat until just smoking. Add 2 tsp neutral oil and swirl. Sear the tuna 45–60 seconds per side for rare (depending on steak thickness ~1 inch). For medium-rare sear 60–75 seconds per side. Do not overcrowd; use a hot pan to get a good crust. Remove tuna and let rest on a cutting board for 3–4 minutes before slicing thinly on the bias.
Salad Base & Vegetables
While tuna marinates, prepare the salad vegetables. Combine 4 cups mixed greens and 1 cup shredded cabbage in a large bowl. Add 1 cup cooked shelled edamame, julienned carrot, 1/2 sliced red bell pepper, 1/4 thinly sliced red onion, and 1/2 thinly sliced jalapeño (remove seeds if you prefer less heat). Toss gently to combine.
Slice 1 avocado and reserve for assembly. Keep 1/2 cup tortilla strips in a small bowl until serving to maintain crispness.
Sweet Chili Glaze
Whisk together 3 tbs sweet chili sauce, 1 tsp honey (or maple syrup), and 1 tsp lime juice in a small bowl. Taste and adjust sweetness or acidity as needed. Set aside.
When tuna is seared and sliced, brush a little of this glaze over the cut-facing sides of the slices or drizzle lightly over the top just before serving (about 1–2 tbs total).
Asian Sesame Vinaigrette
Make the dressing by whisking together 2 tbs rice vinegar, 1 tsp soy sauce, 1 tsp sesame oil, 3 tbs neutral oil, 1 tsp honey or brown sugar, 1/2 tsp grated ginger, 1/2 tsp minced garlic, 1 tsp toasted sesame seeds, 1 tsp fresh lime juice (optional) and 1/4 tsp salt until emulsified. Taste and adjust seasoning.
Dress the salad: drizzle about 2–3 tbs of vinaigrette over the salad base and toss gently to coat just before plating. Reserve extra dressing for those who want more.
Assembly & Garnish
Place dressed salad on plates or a shallow bowl. Fan or arrange the sliced seared ahi tuna over the salad. Add avocado slices and sprinkle the 1/2 cup tortilla strips on top for crunch.
Drizzle the reserved sweet chili glaze over the tuna and salad (about 1–2 tbs) and finish with sliced green onions and extra sesame seeds. Serve with lime wedges on the side for squeezing and season with salt and pepper to taste.
