Prepare cucumbers

Wash cucumbers. Trim 1–2 mm off each end. If using Japanese cucumbers with bumpy skin, you can peel alternating strips for texture (optional). Cut each cucumber lengthwise into quarters, then chop into 1/4–1/3 inch (6–8 mm) bite-size pieces. Place in a shallow bowl.

Lightly salt and macerate

Sprinkle the chopped cucumber with 1/4 tsp salt and toss gently. Let sit for 5–8 minutes to draw out excess water. After resting, gently press or drain any released liquid and pat cucumber lightly with paper towel to remove excess moisture.

Toast sesame seeds (if not pre-toasted)

In a small dry skillet over medium-low heat, toast 1 tablespoon sesame seeds, shaking or stirring frequently, until fragrant and lightly golden, 1–2 minutes. Remove from heat and cool.

Finish garnish

Have bonito flakes, shio kombu, toasted sesame seeds, and ito togarashi ready to top the dressed cucumbers just before serving so they remain texturally distinct.

Dressing

Whisk dressing ingredients: In a small bowl combine 1 tablespoon light soy sauce, 2 teaspoons rice vinegar, 1 teaspoon mirin, 1 teaspoon toasted sesame oil, 1 teaspoon sugar, 1/2 teaspoon grated ginger (optional), 2 tablespoons thinly sliced scallion, and 1/4 teaspoon salt. Whisk until sugar dissolves and the dressing is uniform. Taste and adjust—if you want brighter acidity add up to 1/2 tsp more rice vinegar; for more umami, add a drop more soy.

Toss cucumbers with dressing: Pour the dressing over the prepared cucumbers and toss gently but thoroughly so each piece is evenly coated. Let marinate 2–3 minutes to allow flavors to meld, but not so long that cucumbers become soft.

Plate and garnish: Transfer dressed cucumbers to a serving dish. Sprinkle shio kombu evenly over the cucumbers, then scatter toasted sesame seeds. Finish with a generous dusting of bonito flakes so they lightly flutter on the warm room-temperature cucumbers, and top with a small pinch (about 1 teaspoon) of ito togarashi for color and mild heat.

Serve: Serve immediately as a chilled or room-temperature side. If making ahead by more than 15 minutes, hold bonito flakes and ito togarashi separately and add just before serving so they remain crisp.
