Heat water

Pour 2 cups (about 475 ml) of fresh cold water into a kettle and heat until it reaches 175–185°F (80–85°C). If you don't have a thermometer, bring water to a boil and let it sit uncovered for 1 minute to slightly cool.

Warm teapot or cup

Pour the 1/4 cup (60 ml) of hot water reserved for warming into the teapot or cup you will use, swirl it around to warm the vessel, then discard the water.

Add tea

Place 1 tablespoon of loose green tea leaves into an infuser inside the teapot or cup, or place one green tea bag into the cup.

Steep

Pour the heated 2 cups (475 ml) of water over the tea leaves or tea bag. Steep for 2 to 3 minutes for a light, fresh flavor. For slightly stronger flavor, steep up to 3 1/2 minutes but avoid longer steeping to prevent bitterness.

Remove tea

Lift out the tea bag or remove the infuser with the leaves. If using loose leaves without an infuser, strain the tea into another cup to separate leaves.

Sweeten and finish

If desired, stir in 1 teaspoon of honey or sugar to taste and add a slice of lemon. Taste and adjust sweetener as needed.

Serve immediately while hot. Enjoy.
