Prepare Ginger

Peel the ginger with a spoon or paring knife. Finely grate or mince until you have approximately 6 oz by weight (about 1 heaping cup packed).

Simmer Syrup

Combine the grated ginger, 1 cup sugar, 1 cup water, whole cloves (if using), and ground cinnamon (if using) in a small saucepan. Bring to a gentle boil over medium heat, stirring so the sugar dissolves. Once boiling, reduce heat to low and simmer gently for 10–12 minutes to extract the ginger flavor.

Steep and Add Lemon

Remove the pan from heat and let the mixture steep for 15–20 minutes to deepen flavor. After steeping, stir in 2 tablespoons fresh lemon juice to brighten the syrup.

Strain Syrup

Strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof container, pressing on solids with the back of a spoon to extract as much liquid as possible. Discard solids (or reserve for baking). Let the syrup cool to room temperature.

Chill

Refrigerate the ginger syrup in a sealed jar or bottle. It will keep 10–14 days in the fridge.

To Make Ginger Ale

Assemble

Fill 4 tall glasses with ice, dividing 1 cup ice among them (or adjust to preference). Add 3 tablespoons of chilled ginger syrup to each glass.

Top with Soda

Pour 1 cup (approximately) of cold club soda or sparkling water into each glass (total 4 cups), stirring gently once to combine. Taste and adjust: for a sweeter/stronger drink add more syrup (1/2–1 tbsp increments); for milder, add more soda.

Garnish and Serve

Garnish each glass with a slice of lime or lemon and a sprig of fresh mint if desired. Serve immediately while fizzy.

Batch Mixing Option

To make a pitcher: combine 3/4 to 1 cup ginger syrup with 4 cups cold soda in a pitcher, stir gently, and serve over ice. Adjust syrup to taste.
