Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine pineapple juice, chipotle peppers, minced garlic, ground cumin, oregano, salt, black pepper, and white vinegar. Mix until well combined.

    Marinate the Pork

    Cut the pork shoulder into thin slices and add to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade, letting excess drip off. Cook the pork for 5-7 minutes on each side, or until well browned and cooked through. Let it rest for a few minutes before slicing into small pieces.

    Prepare the Pineapple

    While the pork is resting, grill or sauté the diced pineapple for about 2-3 minutes until slightly caramelized. This enhances the sweetness and flavor.

    Assemble the Tacos

    Warm the taco tortillas on the grill or in a pan for a few seconds on each side. On each tortilla, layer cooked pork, sautéed pineapple, diced onion, and fresh cilantro.
