Prepare Rice Mixture

    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain white rice under cold water until the water runs clear. This helps to remove excess starch.

    Soak the Rice

    In a medium bowl, combine the rinsed rice with the cinnamon stick and 4 cups of water. Allow it to soak for at least 4 hours or overnight for best results.

Blend and Strain

    Blend the Mixture

    After soaking, remove the cinnamon stick and transfer the rice and water mixture to a blender. Blend on high until the rice is finely ground, about 1-2 minutes.

    Strain the Mixture

    Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher, discarding the solids. This will yield a smooth liquid base for your horchata.

Add Final Ingredients

    Mix in Remaining Ingredients

    To the strained rice milk, add the milk (or almond milk), sugar, vanilla extract, ground cinnamon, and a pinch of salt. Stir well until the sugar is completely dissolved.

    Chill and Serve

    Refrigerate the horchata for at least 30 minutes to chill. Serve over ice cubes and enjoy your sweet and refreshing horchata!
