Prepare the Coffee
Brew 240 ml of decaf coffee and let it cool to room temperature. If desired, add dark rum to taste for extra flavor.

Make the Mascarpone Mixture
In a large bowl, combine the egg yolks and granulated sugar. Whisk together until the mixture is pale and creamy. Then, add the mascarpone cheese and the seeds scraped from the vanilla bean. Mix gently until smooth and well combined.

Whip the Mixture
In a separate bowl, whip the mascarpone mixture until it forms soft peaks. Be careful not to overmix; the mixture should be fluffy and smooth.

Dip the Ladyfingers
Quickly dip each ladyfinger into the cooled decaf coffee, ensuring they are soaked but not soggy. Arrange the dipped ladyfingers in a single layer at the bottom of your serving dish.

Layer the Mascarpone Mixture
Spread half of the mascarpone mixture over the layer of ladyfingers. Use a spatula to evenly spread it out.

Repeat the Layers
Add another layer of dipped ladyfingers on top of the mascarpone layer, followed by the remaining mascarpone mixture. Smooth the top with a spatula.

Chill the Tiramisu
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best flavor.

Before serving, dust the top of the tiramisu with cocoa powder. Cut into squares and enjoy your delicious homemade tiramisu!
