Method

Cooking the Pasta

Boil the Pasta

In a large pot, bring salted water to a boil. Add 2 cups of the pasta of your choice and cook according to package instructions until al dente.

Drain the Pasta

Once cooked, drain the pasta in a colander and set aside, reserving a small cup of pasta water for later use.

San Marzano Pomodoro Sauce

Prepare the Sauce

In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 1 minute.

Add Tomatoes

Add the can of San Marzano tomatoes (with juices) to the saucepan. Crush the tomatoes gently with a fork.

Season the Sauce

Add salt and black pepper to taste. Stir in a handful of fresh basil leaves. Simmer the sauce for about 15-20 minutes, allowing the flavors to meld.

Combine Pasta and Sauce

Add the drained pasta to the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

Butter & Cheese Sauce

Melt Butter

In a separate saucepan, melt 4 tablespoons of unsalted butter over low heat.

Add Cheese

Once melted, remove from heat and stir in 1 cup of grated Parmesan cheese until smooth. Season with black pepper to taste.

Combine with Pasta

Pour the butter and cheese sauce over the drained pasta and toss well to coat.
