Method
Cooking the Pasta
Boil the Pasta
Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente.
Drain and Set Aside
Once cooked, drain the pasta and reserve about 1 cup of the pasta water. Set the pasta aside.
Making the Bolognese Sauce
Incorporate Tomatoes and Wine
Once the meats are browned, stir in the crushed tomatoes, tomato paste, and red wine. Let it simmer for 10 minutes to allow the flavors to meld.
Add Milk and Seasonings
Pour in the milk, then season the sauce with salt, black pepper, and dried oregano. Simmer for an additional 20 minutes, stirring occasionally.
Combine Pasta and Sauce
Add the cooked rigatoni to the sauce, tossing gently to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Serve
Serve the rigatoni bolognese in bowls, topped with grated pecorino Romano cheese.
