Method

Cheese Preparation

  1. 1

    Prepare Ricotta

Place Ricotta cheese in a bowl and season with salt and pepper to taste. Mix until smooth and creamy.

  2. 2

    Cut Gorgonzola & Parmesan

Slice Gorgonzola and Parmesan cheeses into bite-sized pieces and arrange them on a cheese board.

Cured Meats Preparation

  1. 3

    Slice Cured Meats

Thinly slice the Prosciutto, Salami, and Capicola. Arrange them on the cheese board around the cheeses.

Accompaniments Preparation

  1. 4

    Prepare Accompaniments

In small bowls, serve the mixed olives, marinated artichokes, and cherry tomatoes. Drizzle honey and balsamic glaze over the accompaniments.

Focaccia Preparation

  1. 5

    Make Focaccia

In a bowl, mix warm water and yeast. Let it sit for about 5 minutes until frothy.

  2. 6

    Combine Ingredients

In a large mixing bowl, combine all-purpose flour, salt, and olive oil. Add the yeast mixture and knead until smooth, about 10 minutes.

  3. 7

    Let it Rise

Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

  4. 8

    Shape and Top

After rising, spread the dough onto a baking sheet. Dimple the surface with your fingers, drizzle with olive oil, and sprinkle fresh rosemary on top.

  5. 9

    Bake

Preheat the oven to 220°C (425°F) and bake the focaccia for 20-25 minutes or until golden brown.

Assembly

  1. 10

    Serve

Once the focaccia is cooled, cut it into squares. Serve the cheeses, cured meats, accompaniments, and focaccia on a large platter. Enjoy!
