Truffle Crema

Method

Preparing the Potatoes

  1. 1

    Wash and Cut Potatoes

Rinse the fingerling potatoes under cold water to remove any dirt. Pat them dry with a towel. Cut the potatoes in half lengthwise to ensure even cooking.

  2. 2

    Season Potatoes

In a large bowl, combine the halved fingerling potatoes, olive oil, five spice powder, salt, and black pepper. Toss until the potatoes are evenly coated with the seasoning mixture.

  3. 3

    Preheat Oven

Preheat your oven to 425°F (220°C).

  4. 4

    Bake Potatoes

Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through for even crispness.

Making the Truffle Crema

  1. 5

    Combine Ingredients

In a medium bowl, mix together the sour cream, truffle oil, chopped chives, lemon juice, and salt. Stir until well combined.

  2. 6

    Adjust Seasoning

Taste the truffle crema and adjust the salt as needed.

Serving

  1. 7

    Plate the Dish

Once the potatoes are done baking, remove them from the oven and let them cool slightly. Serve the crispy fingerlings on a plate with a generous dollop of truffle crema on the side for dipping.

  2. 8

    Garnish

Optionally, garnish the dish with additional chopped chives or a drizzle of truffle oil for an enhanced presentation.
