Method
Salad Preparation
Prepare the Romaine Lettuce
Wash the romaine lettuce thoroughly under cold water. Pat dry with a towel and chop into bite-sized pieces. Place in a large salad bowl.
Crouton Preparation
Make the Croutons
Preheat the oven to 375°F (190°C). Cut the bread slices into cubes. In a mixing bowl, combine the bread cubes, olive oil, garlic powder, and salt. Toss until the bread is well coated.
Bake the Croutons
Spread the coated bread cubes on a baking sheet in a single layer. Bake for 10-15 minutes, or until golden brown and crispy, tossing halfway through for even browning. Remove from the oven and let cool.
Dressing Preparation
Prepare the Caesar Dressing
In a medium bowl, whisk together the mayonnaise, lemon juice, Worcestershire sauce, minced garlic, and anchovy paste until smooth. Stir in the grated Parmesan cheese and season with black pepper to taste.
Assembly
Combine Salad Ingredients
Add the croutons to the bowl of romaine lettuce. Drizzle the Caesar dressing over the salad and toss gently until the lettuce is well coated with the dressing.
Serve the Salad
Shave the Grana Padano cheese over the top of the salad as a finishing touch. Serve immediately for best flavor and texture.
