Method

Making the Mozzarella

    Heat the Milk

    In a large pot, pour the milk and heat it over medium heat until it reaches 190°F (88°C), stirring occasionally.

    Add Lemon Juice and Salt

    Once the milk is heated, remove it from the heat and add the lemon juice and salt. Stir gently for about 1 minute, allowing the curds to form.

    Strain the Curds

    Using a slotted spoon, scoop out the curds and place them in a colander lined with cheesecloth. Let it drain for about 5 minutes.

    Knead the Cheese

    Once drained, place the curds in a bowl and knead them gently with your hands until they become smooth and elastic.

    Shape the Mozzarella

    Shape the mozzarella into small balls and place them in a bowl of cold water to cool and firm up.

Preparing the Salad

    Slice the Tomatoes

    While the mozzarella is cooling, wash the heirloom tomatoes and slice them into thick rounds.

    Arrange the Ingredients

    On a large serving platter, alternate layers of sliced tomatoes and mozzarella balls. Tuck fresh basil leaves in between.

    Drizzle with Balsamic and Olive Oil

    Drizzle the balsamic vinegar and olive oil over the arranged salad. Season with salt and pepper to taste.

    Serve

    Serve the Caprese salad immediately, garnished with additional basil leaves if desired.
