Preparation
- 1
Prepare the Bread
Preheat your oven to 400°F (200°C). Slice the sourdough bread into 1/2-inch thick slices.
- 2
Toast the Bread
Arrange the bread slices on a baking sheet. Drizzle with olive oil and toast in the oven for about 8-10 minutes or until golden brown.
Topping
- 3
Prepare the Tomato Mixture
While the bread is toasting, chop the baby heirloom tomatoes into halves or quarters, depending on their size. In a mixing bowl, combine the chopped tomatoes with salt and pepper.
- 4
Make the Herbed Ricotta
In a separate bowl, mix the ricotta cheese with chopped fresh basil leaves. Add salt and pepper to taste. Stir until well combined.
Assembly
- 5
Assemble the Bruschetta
Once the bread is toasted, remove it from the oven. Rub the toasted side of each slice with the cut side of the garlic cloves for added flavor.
- 6
Top with Mixtures
Spread a generous layer of the herbed ricotta on each slice of toast. Top with the tomato mixture and drizzle with balsamic glaze.
