Prepare the Risotto

Cook the Rice
Add the Arborio rice to the saucepan and stir for 2 minutes, allowing the rice to absorb the flavors. Gradually add the vegetable broth, one cup at a time, stirring frequently until the liquid is absorbed before adding more. This process should take about 20 minutes until the rice is cooked al dente.

Finish the Risotto
Once the rice is cooked, remove it from the heat and stir in grated Parmesan cheese, salt, and black pepper. Mix well and let it cool to room temperature.

Prepare the Filling
Once the risotto has cooled, take a small amount (about 2 tablespoons) of risotto and flatten it in the palm of your hand. Place a cube of mozzarella cheese or your choice of filling in the center, then encase the filling with the rice, rolling it into a ball.

Fry the Arancini
Carefully place the breaded arancini in the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes until golden brown, turning occasionally. Remove with a slotted spoon and drain on paper towels.
