Ravioli and Sauce
Preparation
1. Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil. Roast in the oven for about 30 minutes until soft and golden.
2. Prepare the Roasted Garlic Crema
Once the garlic is roasted, squeeze the cloves into a blender. Add the heavy cream and Parmesan cheese. Blend until smooth and creamy. Season with salt and pepper to taste.
3. Cook the Spinach
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.
4. Prepare the Tomato Sauce
In a saucepan, combine the crushed tomatoes and basil. Bring to a simmer over medium heat, seasoning with salt and pepper. Let it cook for about 10 minutes.
5. Cook the Ravioli
In a large pot of boiling salted water, cook the four cheese ravioli according to package instructions. Drain and set aside.
6. Assemble the Dish
On each plate, place a serving of ravioli, top with wilted spinach, drizzle with roasted garlic crema, and spoon over the tomato sauce. Serve immediately.
