Method

Cooking Pasta

  1. 1

    Boil Water

Bring a large pot of water to a boil. Once boiling, add the salt.

  2. 2

    Cook Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining the spaghetti, reserve about 1 cup of the pasta cooking water.

  4. 4

    Drain Spaghetti

Drain the spaghetti and set aside.

Preparing Sauce

  1. 5

    Mix Eggs and Cheese

In a mixing bowl, whisk together the eggs and grated Pecorino Romano cheese until well combined. Set aside.

  2. 6

    Add Black Pepper

Stir in the black pepper into the egg and cheese mixture.

Cooking Pancetta

  1. 7

    Cook Pancetta

In a large skillet over medium heat, add the diced pancetta. Cook until it becomes crispy, about 5-7 minutes.

  2. 8

    Combine with Spaghetti

Once the pancetta is crispy, add the drained spaghetti to the skillet and toss to combine.

Combining Ingredients

  1. 9

    Add Sauce to Pasta

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

  2. 10

    Serve

Serve immediately with extra Pecorino Romano cheese and black pepper on top, if desired.
