Cooking Pasta

Boil Water
Bring a large pot of water to a boil. Once boiling, add the salt.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining the spaghetti, reserve about 1 cup of the pasta cooking water.

Drain Spaghetti
Drain the spaghetti and set aside.
Preparing Sauce

Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs and grated Pecorino Romano cheese until well combined. Set aside.

Add Black Pepper
Stir in the black pepper into the egg and cheese mixture.
Cooking Pancetta

Cook Pancetta
In a large skillet over medium heat, add the diced pancetta. Cook until it becomes crispy, about 5-7 minutes.

Combine with Spaghetti
Once the pancetta is crispy, add the drained spaghetti to the skillet and toss to combine.

Serve immediately with extra Pecorino Romano cheese and black pepper on top, if desired.
