Preparation of Base

Heat Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm, but not boiling.

Mix Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Cook the Mixture
Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).

Add Vanilla
Remove from heat and stir in the vanilla extract. Let the base cool to room temperature.
Flavoring and Churning

Add Flavoring
Divide the base into three equal parts. For the chocolate gelato, mix in the chocolate syrup. For the strawberry gelato, fold in the pureed strawberries. For the pistachio gelato, stir in the finely chopped pistachios.

Chill the Mixture
Cover each flavor with plastic wrap and refrigerate for at least 2 hours or until completely chilled.

Churn Gelato
Pour each chilled flavor into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the churned gelato to an airtight container. Freeze for at least 4 hours to firm up before serving.
