Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving a small cup of pasta water.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, wash and chop the zucchini, bell pepper, and carrot into bite-sized pieces. Halve the cherry tomatoes and wash the spinach.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped zucchini, bell pepper, and carrot. Sauté for about 5-7 minutes until they start to soften.

    Add Tomatoes and Spinach

    Add the cherry tomatoes and spinach to the skillet. Cook for an additional 3-4 minutes until the spinach wilts and the tomatoes soften.

Making the Sauce

    Add Garlic

    Mince the garlic and add it to the skillet with the vegetables. Cook for 1-2 minutes until fragrant.

    Season the Mixture

    Season the mixture with salt and black pepper, stirring well to combine.

Combining Ingredients

    Combine Pasta and Sauce

    Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.

    Serve

    Serve the pasta primavera hot, garnished with grated Parmesan cheese.
