Cooking Pasta

    Boil Water

    In a large pot, bring salted water to a boil.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to the package instructions until al dente, usually about 8-10 minutes.

Preparing Sauce

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy, about 4-5 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add black pepper and mix again.

Combining Ingredients

    Combine Pasta and Pancetta

    Once the spaghetti is cooked, reserve about 1 cup of pasta water and then drain the pasta. Quickly add the hot spaghetti to the skillet with pancetta.

    Add Egg Mixture

    Off the heat, pour the egg and cheese mixture over the hot pasta, stirring quickly to combine. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Season and Serve

    Taste and adjust seasoning with salt and additional black pepper if needed. Serve immediately with extra Parmesan cheese on the side.
