Panna Cotta Base

Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5-10 minutes until it becomes gelatinous.

    Heat the Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until the sugar is completely dissolved and the mixture is hot but not boiling.

    Add Gelatin and Vanilla

    Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Add the vanilla extract and mix well.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow them to cool slightly before refrigerating.

    Chill

    Refrigerate the panna cotta for at least 4 hours, or until set.

Berry Topping Preparation

    Prepare the Berries

    In a medium bowl, combine the mixed seasonal berries, granulated sugar, and lemon juice. Toss gently to coat the berries with sugar and juice.

    Let it Macerate

    Let the berry mixture sit for about 15-20 minutes to allow the berries to release their juices.

    Serve

    Once the panna cotta is set, top it with the macerated berries before serving.
