Dynamite sauce

Make sauce
In a medium bowl, whisk together 1 cup mayonnaise, 2 tbs sriracha, 1 tbs sweet chili sauce, 1 tsp rice vinegar, 1 tsp honey, 1 tsp minced garlic, 1 tsp smoked paprika and 1 tsp kosher salt until smooth and homogenous. Taste and adjust heat or sweetness (add more sriracha for heat or more honey for sweet). Refrigerate while preparing sandwich so flavors meld (at least 15 minutes).

Prep vegetables
Peel a large yellow onion and slice into 1/4-inch rings, then separate into individual rings. Wash jalapeños, slice lengthwise into 1/4-inch strips. If you prefer milder heat, remove seeds and membranes; for more heat leave them in.

Grill
Heat a grill pan or outdoor grill over medium-high heat until hot. Place onions and jalapeños directly on the grates or in a grill basket. Cook 3–4 minutes per side for the onions (until they have good char marks and are softened) and 2–3 minutes per side for jalapeños (until blistered). Remove to a plate. If using a stovetop skillet, cook the onions 6–8 minutes, stirring occasionally, until caramelized and charred in spots; cook jalapeños 4–5 minutes until blistered.

Layer ingredients
On the bottom half of each roll, spread about 2 tbs dynamite sauce (adjust to taste). Add 2 slices provolone per sandwich, overlapping. Top the cheese with approximately 1/2 cup grilled onions and half of the grilled jalapeño slices (about 1–2 jalapeño pieces per sandwich depending on size).

Melt cheese
Close sandwiches and return to the grill or skillet, press lightly and cook 1–2 minutes per side over medium heat until provolone is melted and bread is warmed through. Alternatively, place sandwiches on a baking sheet under a broiler for 1–2 minutes until cheese melts—watch carefully to avoid burning.

Finish
Remove from heat, open and add an additional drizzle (about 1 tsp) of dynamite sauce if desired for extra heat. Serve immediately.
