Bacon Topping (Loaded Fries)

    prep potatoes

    Wash and peel (optional) the russet potatoes. Cut into 1/4–1/3-inch matchstick fries. Place cut fries in a large bowl of cold water and soak for 30 minutes to remove excess starch.

    dry fries

    Drain the potatoes and rinse under cold water. Spread them on clean kitchen towels or paper towels and pat thoroughly dry — moisture will cause oil splatter and soggy fries.

    fry (first blanch)

    Heat 2 cups of vegetable oil in a heavy-bottomed pot or deep fryer to 325°F (160°C). Fry the potatoes in batches for 3–4 minutes until soft but not colored. Remove with a slotted spoon and drain on paper towels.

    fry (finish)

    Increase oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–3 minutes until golden and crisp. Drain on paper towels and immediately season with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp paprika.

Cheese Sauce

    In a medium saucepan over medium heat, melt 2 tbs butter. Add 2 tbs flour and whisk constantly for 1–2 minutes until the mixture is bubbly and slightly nutty — do not brown.

    Slowly whisk in 1 cup whole milk. Continue whisking and bring to a gentle simmer until the sauce thickens, about 3–4 minutes.

    finish cheese sauce

    Lower heat to low. Remove from heat briefly and stir in 1.5 cups grated sharp cheddar a handful at a time until melted and smooth. Stir in 2 tbs cream cheese (optional) for extra silkiness, 1/2 tsp mustard, 1/2 tsp hot sauce, 1/2 tsp salt, and 1/4 tsp black pepper. Keep warm over very low heat, stirring occasionally.

Bacon Topping (Loaded Fries)

    cook bacon

    In a skillet over medium heat, cook 6 bacon strips until crispy, flipping as needed, about 8–10 minutes. Transfer to paper towels to drain, then chop into 1/2-inch pieces.

    assemble loaded fries

    Place hot fries on a large platter or individual plates. Pour desired amount of warm cheese sauce over fries, sprinkle chopped bacon evenly, dollop 1/2 cup sour cream in the center or as desired, and finish with 1/4 cup sliced green onions. Serve immediately.

Cheesesteak Topping (Cheesesteak Fries)

    prep steak and veg

    Slice ribeye as thinly as possible (partially freezing the steak for 20–30 minutes helps). Thinly slice 1/2 cup yellow onion and 1/4 cup green bell pepper.

    cook steak and vegetables

    Heat 1 tbs olive oil in a skillet over high heat until shimmering. Add the onions and peppers and cook 2–3 minutes until softened and slightly charred. Push vegetables to the side, add sliced ribeye in a single layer, season with 1/2 tsp salt, 1/4 tsp black pepper, 1 tsp Worcestershire sauce, and 1 minced garlic clove. Sear steak quickly, stirring, until just cooked through, about 2–3 minutes total. Mix with vegetables and remove from heat.

    assemble cheesesteak fries

    Place hot fries on a platter or plates. Top with warm cheese sauce, then evenly distribute the cooked ribeye, onions, and peppers. Optionally add extra sliced green onions or pickled jalapeños. Serve immediately.
