Jalapeño-infused tequila

Prepare and infuse
Slice the jalapeño in half lengthwise and remove seeds if you prefer milder heat; leave seeds for more kick. Place the jalapeño halves in a clean glass jar and pour 1.5 cups blanco tequila over them. Seal and store at room temperature or in the refrigerator for 12–24 hours, tasting after 6–8 hours to monitor heat level. For a medium spice, 12 hours is typical. When infusion reaches desired heat, strain out jalapeño pieces through a fine mesh sieve or cheesecloth into a clean bottle and discard solids. Label and refrigerate until ready to use.

Combine mixer ingredients
In a small pitcher or jar, combine 1 cup unsweetened cranberry juice, 1/2 cup fresh apple cider, 1/4 cup fresh lime juice, and 2 tablespoons agave nectar. Whisk or shake vigorously until the agave is fully dissolved and the mixture is homogenous. Taste and adjust sweetness with up to 1 additional tablespoon agave if desired. Chill in refrigerator or over ice until ready to assemble cocktails.

Optional quick reduction (for more body)
If you prefer a slightly thicker, more concentrated mixer, simmer the cranberry-apple mixture in a small saucepan over medium-low heat for 6–8 minutes until slightly reduced; cool completely before using. This step is optional.
Cocktail assembly

Rim the glass: run a lime wedge around the rim of a rocks or coupe glass, then dip the rim into coarse salt to coat. Set aside.

In a cocktail shaker, add 2 oz jalapeño-infused tequila, 1 oz Cointreau, 2 oz cranberry-apple mixer, 1/2 oz fresh lime juice, and 0.25 oz agave nectar if you want it sweeter. Fill the shaker with ice (about 1 cup).

Shake vigorously for 12–15 seconds until the exterior of the shaker is cold and well chilled.

Garnish with a thin apple slice or a few fresh cranberries and an optional jalapeño slice on top. Serve immediately.
