Coffee and water

Optional additions

Method

Prepare coffee

  1. 1

    Measure

Measure 0.033 cups of whole coffee beans (approximately 2 tablespoons, about 10–12 g). This yields one standard 8 fl oz cup of brewed coffee.

  2. 2

    Grind

Grind the measured beans to a medium grind for drip or pour-over, or a slightly coarser grind for French press. Grind immediately before brewing for best flavor.

  3. 3

    Heat water

Heat 8 fl oz (about 240 ml) of fresh water to 195–205°F (90–96°C). If you don't have a thermometer, bring water to a boil and let sit 30 seconds.

  4. 4

    Bloom (for pour-over or drip)

If using pour-over or drip: place a paper filter in the dripper and rinse with hot water to remove paper taste and preheat the vessel. Add the ground coffee to the filter. Pour about 40–50 ml (roughly twice the coffee weight) of hot water evenly over the grounds to saturate them. Let bloom for 30–45 seconds to release CO2.

  5. 5

    Brew

Continue pouring the remaining hot water slowly and evenly over the grounds if using pour-over (total 8 fl oz). For drip machine, start the brew cycle. For French press, add grounds to the carafe, pour all hot water, stir gently, cover, and let steep 4 minutes before pressing the plunger down slowly.

  6. 6

    Serve

Once brewed, immediately transfer coffee to a cup to avoid over-extraction from grounds left in contact with liquid. If using a pot, pour into a pre-warmed mug.

Finish and customize

  1. 7

Taste the brewed coffee. Add up to 2 tablespoons of milk or plant-based milk to soften the flavor, if desired.

  2. 8

Add sugar or your preferred sweetener to taste (start with 1 teaspoon) and stir until dissolved.

  3. 9

If you want to reduce bitterness, add a very small pinch of salt (about 1/8 tsp) and stir; this can round flavor without making the coffee salty.

  4. 10

Serve hot immediately. Enjoy your coffee to start your day.
