Prep bread
Spread mayonnaise on one side of each bread slice if using. Lightly butter the outside face of two bread slices (these will be the exterior for grilling).

Assemble sandwich
Place a slice of bread mayo-side up (unbuttered side up). Layer three slices of ham evenly, then one or one-and-a-half slices of white cheddar (overlap if needed). Top with the second bread slice butter-side out.

Grill
Heat a nonstick skillet or griddle over medium heat. Place the sandwich in the pan and press gently with a spatula. Cook until the bottom is golden brown, about 3–4 minutes. Flip and cook another 2–3 minutes until the cheese is melted and the second side is golden. If cheese hasn't fully melted, cover pan for 30–60 seconds to trap heat. Remove and let rest 1 minute, then slice in half.

Cook potatoes
Heat a large skillet over medium-high heat. Add olive oil and butter. When shimmering, add the diced potatoes in a single layer and let them sear undisturbed for 3–4 minutes to develop a crust. Stir or flip pieces and continue to cook, stirring every 2–3 minutes, until potatoes are golden and tender, about 10–12 minutes total (less if par-cooked).

Add onion & season
When potatoes are about halfway done, push them to the side and add the diced onion to the pan; sauté 2–3 minutes until softened and translucent. Combine onions with potatoes and sprinkle kosher salt, black pepper, and paprika. Taste and adjust seasoning. Cook 1–2 more minutes to marry flavors. Stir in chopped parsley if using, and remove from heat.
