    Whisk eggs

    Crack the eggs into a small bowl. Add the milk, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Whisk briskly until combined and slightly frothy. This aerates the eggs and yields a fluffier texture.

    Cook eggs

    Heat a nonstick skillet over medium-low heat. Add 1 teaspoon butter and let it melt, coating the pan. Pour the egg mixture into the skillet. Let it sit undisturbed for 20–30 seconds until the edges begin to set, then gently push the set edges toward the center with a spatula, tilting the pan to allow uncooked egg to run out. Continue folding gently until mostly set but still moist, about 1–2 minutes total. Remove from heat a little before fully firm — residual heat will finish cooking. Taste and adjust with remaining salt and pepper if needed.

    Toast the bread

    While eggs are cooking, split the English muffin or roll and spread the softened butter on the cut faces. Place buttered sides down on a clean skillet over medium heat or in a toaster oven and toast until golden and crisp, about 1–2 minutes per side on the skillet.

    Layer sandwich

    Place the toasted bottom half of the muffin on a plate. Put the cheese slice on the warm toast so it begins to soften. Add any optional hot meat (sausage patty or ham) on top of the cheese if using. Fold or place the cooked eggs over the cheese/meat. Add optional tomato slices or spinach if desired. Top with the muffin cap and press lightly to meld. If you prefer fully melted cheese, return the assembled sandwich to the warm skillet for 20–30 seconds, covered, to steam and melt the cheese.

    Prepare meat (if using)

    If using a pre-cooked sausage patty or ham, warm it in the skillet over medium for 1–2 minutes per side until hot. For raw sausage patties, cook 3–4 minutes per side until internal temperature reaches 160°F (71°C). Drain on a paper towel.

    Add fresh toppings

    If adding tomato or spinach, place tomato slices directly on top of the eggs and tuck spinach leaves under or over the eggs so they wilt slightly from the residual heat. Drizzle hot sauce to taste if desired.
