Mix yogurt and flavoring
In a medium bowl, whisk together the Greek yogurt and optional plain yogurt until smooth. Stir in 1 tablespoon honey, 1/4 teaspoon vanilla extract and the lemon zest (if using). Taste and adjust sweetness to preference.

Cover and chill while you prepare granola and berries if not serving immediately.
Granola

Toast quick granola
Preheat a small skillet over medium-low heat. Combine rolled oats, chopped nuts, and shredded coconut in the skillet. Drizzle with 1 tablespoon maple syrup and 1 teaspoon oil. Sprinkle cinnamon and salt over the mixture.

Toast, stirring frequently, for 4–6 minutes until the oats are fragrant and the nuts are lightly browned. Remove from heat and spread on a plate to cool — the granola will crisp as it cools. If you prefer softer clusters, press the warm mixture lightly with the back of a spoon and let cool.

Prepare berries
Rinse berries gently and drain well. Hull and quarter strawberries if using. Combine strawberries, blueberries and raspberries in a small bowl. If berries are very firm or slightly tart, toss with 1 teaspoon honey or maple syrup and let sit 5–10 minutes to macerate.

Assemble the parfait
Divide the flavored yogurt between two serving bowls or glasses (about 1/2 cup each). Spoon half the granola over the yogurt, then top with half the berry mixture. Repeat with another layer of yogurt, granola and berries for a layered parfait, or simply top each bowl with the remaining granola and berries for a single-layer serving.

Finish with a light drizzle of extra honey or maple syrup and garnish with fresh mint leaves if desired. Serve immediately so the granola stays crisp.
