Prep wings
Pat the wings very dry with paper towels. If whole wings were purchased, separate into drumettes and flats and discard tips or save for stock.

Place wings in a large bowl. Add baking powder, salt, black pepper, garlic powder, and 1 tablespoon vegetable oil. Toss until wings are evenly coated. The baking powder helps dry the skin and create extra crispness when roasted.

Arrange a wire rack on a rimmed baking sheet and space the wings in a single layer, skin-side up. For best results, let the wings sit uncovered in the refrigerator for 30 minutes to 2 hours to dry the skin (optional).

Preheat oven to 425°F (220°C). Roast wings for 35–45 minutes, flipping once halfway, until skin is deep golden brown and crisp and internal temperature reaches 165°F (74°C). If you prefer extra crisp, broil 2–3 minutes at the end, watching carefully to avoid burning.
For the firecracker sauce

While the wings roast, make the sauce. In a small bowl, whisk together gochujang, sriracha, honey, soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and 2 tablespoons water until smooth.

In a separate small cup, mix the cornstarch with 1 tablespoon cold water to make a slurry. Stir the slurry into the sauce mixture to help it thicken and stick to the wings.

Warm the sauce in a small saucepan over medium-low heat, stirring constantly, for 2–3 minutes until it becomes glossy and slightly thickened. Taste and adjust heat/sweetness: add a bit more honey to mellow, more sriracha to increase heat, or extra soy for saltiness.

When wings are fully cooked and crispy, transfer them to a large clean bowl. Pour the warm firecracker sauce over the wings and toss gently but thoroughly so each piece is evenly coated. Work in batches if necessary so sauce doesn’t cool too quickly.

Arrange sauced wings on a platter. Sprinkle toasted sesame seeds and sliced scallions over the top. Serve immediately with lime wedges on the side for a bright squeeze if desired.

Leftover wings can be kept in an airtight container in the refrigerator for up to 2 days. Reheat in a 375°F (190°C) oven for 8–10 minutes or air-fry at 350°F (175°C) for 4–6 minutes to re-crisp, then toss with warmed sauce before serving.
