Score, season and rest
Pat the duck breasts dry with paper towels. Using a sharp knife, score the skin in a crosshatch pattern without cutting into the meat. Season both sides with kosher salt and freshly ground black pepper. Let sit at room temperature for 20 minutes.

Render skin and sear
Place a cold (room temp) heavy skillet or cast-iron pan over medium-low heat. Place the duck breasts skin-side down in the dry pan (no oil). Cook gently for 8–10 minutes, pressing occasionally, until much of the fat has rendered and the skin is deep golden brown and crisp. If the pan becomes very dry, add 1 tablespoon olive oil to prevent sticking.

Finish in oven
Flip the breasts and sear meat-side for 1 minute. Transfer the pan to a preheated 400°F (200°C) oven and roast for 6–8 minutes for medium-rare (internal 125–130°F / 52–54°C). For medium, roast 8–10 minutes. Remove and transfer to a cutting board; tent loosely with foil and rest 8–10 minutes (carryover will rise a few degrees).

Sauté shallots and mushrooms
While the duck rests, heat a large skillet over medium-high heat. Add 1 tablespoon unsalted butter. When it foams, add sliced shallots and sauté 2–3 minutes until soft and fragrant. Add the sliced mushrooms and spread into an even layer; cook undisturbed 3–4 minutes to brown, then stir and continue cooking until mushrooms release moisture and it evaporates, about 4–5 more minutes.

Add aromatics and deglaze
Reduce heat to medium, add remaining 1 tablespoon butter and the minced garlic; cook 30 seconds until fragrant. Stir in fresh thyme leaves, then deglaze the pan with 3 tablespoons dry sherry or white wine, scraping up browned bits. Cook until wine is mostly evaporated, 1–2 minutes.

Season
Season the mushroom mixture with 1 teaspoon salt and 1/2 teaspoon black pepper. Taste and adjust seasoning. If using, finish with 1/2 tablespoon lemon juice to brighten.

Slice duck and arrange
Slice each rested duck breast thinly on the bias. Arrange slices slightly overlapping on a warm serving platter or on individual plates.

Top with mushrooms and cheese
spoon the warm mushroom and shallot mixture over the duck slices, dividing evenly. Top each portion with 1–2 slices of Swiss cheese (one slice per breast half). The residual heat from the duck and mushrooms will gently soften the cheese; if you prefer the cheese melted more, place the plated duck briefly under a hot broiler (about 30–60 seconds) — watch carefully so the duck does not overcook.

Serve immediately while hot, slicing additional lemon on the side if desired. Leftovers keep covered in the refrigerator for up to 2 days; reheat gently to avoid overcooking the duck.
