Prep
1. Wash and trim greens
Wash the mixed leafy greens thoroughly under cold running water to remove grit. Trim the tough ends of bok choy or choy sum and separate large leaves; cut any thick stems into 1-inch pieces so stems and leaves cook evenly.
2. Prepare aromatics
Peel and thinly slice the garlic cloves. Julienne the ginger. Slice the scallions into 1-inch pieces, keeping white and green parts together. If using chili, thinly slice and set aside.
3. Mix sauce: in a small bowl combine light soy sauce, oyster sauce, sesame oil, rice wine, water or stock, and sugar. Stir until sugar dissolves. Keep salt and pepper nearby to adjust at the end.

4. Heat the wok/pan
Place a wok or large skillet over high heat until very hot (a drop of water should sizzle and evaporate instantly). Add the neutral oil and swirl to coat.
5. Sear aromatics
Add the sliced garlic and white parts of the scallions (reserve green tops for finishing) and the ginger to the hot oil. Stir-fry for 20–30 seconds until fragrant and just beginning to color; be careful not to burn the garlic.
6. Add stems first
Add any thicker stems (bok choy stems, choy sum stems) to the wok and stir-fry for 30–45 seconds to begin softening.
7. Stir-fry greens
Add the leafy greens in batches if necessary, tossing constantly. Pour the prepared sauce evenly over the greens. Continue to toss and stir-fry for 1–2 minutes until leaves are wilted and stems are tender-crisp. If the pan becomes dry, add an extra tablespoon of water or stock to help steam and deglaze the pan.
8. Finish and season
When greens are just tender, add the remaining scallion greens, sliced chili (if using), sesame oil (if not already in sauce), salt and pepper to taste. Toss to combine and cook for another 10–20 seconds. Taste and adjust with additional soy or a pinch more sugar or salt if needed.
Serve
9. Transfer the stir-fried greens to a warmed serving platter. Sprinkle with toasted sesame seeds and drizzle the optional lemon or lime juice over the top. Serve immediately as a side dish with rice or as part of a larger meal.
