    Prepare Fresno infusion

    Muddle the thinly sliced Fresno chile and simple syrup in a cocktail shaker or mixing glass until the chile releases its oils and the syrup takes on a faint chile aroma and color (about 20–30 seconds). If you want milder heat, remove seeds before muddling; for more heat, include a small portion of seeds.

    Build the cocktail

    Add the apricot brandy, gin (or vodka), Livener aperitif (or substitute), fresh lemon juice, and egg white (if using) to the shaker with the muddled Fresno and syrup.

    Dry shake

    Without ice, shake vigorously for 12–15 seconds to emulsify the egg white and incorporate the chile flavor. This creates a frothy texture and helps integrate all ingredients.

    Wet shake

    Add ice to the shaker (about 1 cup) and shake again vigorously for 12–20 seconds until the shaker is cold to the touch and well-chilled.

    Double strain and serve

    Double-strain the cocktail into a chilled coupe or martini glass using both the shaker strainer and a fine-mesh strainer to remove chile bits and ice shards. The drink should be pale, slightly cloudy from the egg white, with a supple foam on top.

    Garnish

    Float a thin slice of Fresno chile or place it on the rim, and add a lemon twist (expressed over the drink and dropped in) if desired. Serve immediately.

    Notes on substitutions & heat control

    If you don't have Livener aperitif, use Lillet Blanc or Cocchi Americano. To reduce heat, use less Fresno or discard seeds; to intensify, muddle a larger piece or let slices steep briefly in the spirit before mixing. Omit the egg white if you prefer no raw egg; shake with ice only and expect less foam.
