Cook rice
Rinse the rice under cold water until the water runs clear to remove excess starch. In a medium saucepan combine rinsed rice, 2.5 cups water or low-sodium chicken stock, 1 tsp salt, and 1 tbsp vegetable oil. Bring to a boil, then reduce heat to low, cover and simmer 15–18 minutes until liquid is absorbed. Remove from heat and let rest, covered, 10 minutes. Fluff with a fork and spread on a baking sheet to cool slightly; for best results use day-old refrigerated rice, broken up into grains.
Blue Crab
Season crab meat
Gently toss the picked blue crab meat with 1 tbsp melted unsalted butter, 1 tbsp lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper. Set aside in a bowl. Keep covered in the refrigerator if preparing ahead, and handle gently so lumps of meat remain intact.
Optional quick sear
If using raw steamed crab or you want a slightly toasted flavor, heat a skillet over medium-high heat, add 1 tsp oil, and quickly sear crab for 30–45 seconds per side just to warm and dry slightly. Remove and keep warm. Avoid overcooking to preserve delicate texture.

Prepare aromatics
Slice scallions separating white from green parts. Mince shallot and garlic. Dice red bell pepper and measure peas/carrots if using.
Cook vegetables
Heat a large wok or heavy skillet over high heat until hot. Add 3 tbsp neutral oil and 1 tbsp butter. When shimmering, add the minced shallot and the white parts of the scallions. Stir-fry 30–45 seconds until fragrant. Add minced garlic and diced red bell pepper; stir-fry 30 seconds. Add frozen peas/carrots and continue stir-frying 1 minute until vegetables are bright and just tender-crisp.
Sauce & Seasoning
Mix sauce
In a small bowl combine 2 tbsp light soy sauce, 1 tbsp oyster sauce, 1/2 tsp sesame oil, 1/2 tsp fish sauce, 1/4 tsp white pepper, and 1/2 tsp sugar. If you want a slightly glossy coating, dissolve 1/2 tsp cornstarch in 1 tbsp cold water and add to the sauce; stir until smooth.
Add rice and sauce
Increase heat to high. Add the cooled or day-old rice to the wok, breaking up any clumps with your spatula. Stir-fry 2–3 minutes, pressing and tossing so each grain gets coated and slightly toasted. Pour the prepared sauce evenly over the rice and continue stir-frying 2 minutes, tossing constantly to distribute. Taste and adjust seasoning — add a pinch more salt or 1/2 tbsp soy if needed.
Combine Crab & Finish
Fold in crab
Toss scrambled eggs into the rice. Add the seasoned blue crab meat and gently fold it into the rice mixture, being careful not to break lumps of crab. Stir-fry 1–2 minutes more until crab is warmed through and the sauce evenly coats everything. Add chopped scallion greens and chopped cilantro or parsley; toss briefly.
Final seasoning and serve
Turn off heat and drizzle a few drops of sesame oil if desired. Transfer the fried blue crab rice to a serving platter. Garnish with additional sliced scallion greens, chopped herbs, and lemon wedges on the side. Serve immediately.
