Method

Prepare Rice & Crab

    Rice prep

    If using freshly cooked rice, spread rice on a tray and refrigerate until cool and slightly dry (at least 1 hour). Break up any clumps so the grains are separated.

    Make quick crab stock (optional)

    In a small saucepan, add crab shells, water and white wine. Bring to a simmer, crush shells with a spoon, and simmer gently for 10 minutes to extract flavor. Strain and reserve 1/4 cup of the liquid; discard shells. Use this for moistening the rice if needed.

    Pick through blue crab meat to remove any shell fragments. Keep larger lumps separate from flaked meat. Mix the crab fat (tomalley) into the crab meat gently — this will be used to flavor the fried rice.

Aromatics & Eggs

    Heat a large wok or heavy skillet over high heat until smoking point. Add 1 tablespoon neutral oil and swirl to coat.

    Add lightly beaten eggs, tilt the wok to spread into a thin omelet. Cook until just set (still slightly soft), remove to a plate and slice into ribbons. Set aside.

    Return the wok to high heat. Add remaining 2 tablespoons oil. Add minced garlic and sliced shallot (if using). Stir‑fry quickly until fragrant and just beginning to color, about 30–45 seconds. Do not burn the garlic.

Frying Rice

    Add the day‑old rice to the wok in batches if necessary. Spread and press the rice so each grain contacts the hot surface. Let it sit undisturbed for 20–30 seconds to develop light toasty spots, then stir and break apart with a spatula.

    Sprinkle the soy sauce, fish sauce, oyster sauce, white pepper and sugar evenly over the rice. Toss quickly and thoroughly so the sauces coat the grains. If the rice seems dry, add 1–2 tablespoons of reserved crab stock or water — add sparingly to avoid soggy rice.

    Add the crab meat and crab fat mixture. Fold gently to combine, preserving some lumps of meat. Reduce heat to medium‑high and cook for 1–2 minutes until crab is warmed through and integrated with the rice.

    Taste and adjust seasoning with salt and additional fish sauce or soy if needed. Be careful — crab fat and fish sauce are both salty.

Finish & Garnish

    Add the sliced egg ribbons and white parts of the green onions. Toss gently for 30–45 seconds to combine and warm the eggs.

    Turn off the heat. Stir in the butter and fold in the green parts of the scallions and chopped cilantro. If you want a touch more crab aroma, stir in an additional 1 teaspoon crab fat (optional).

    Plate the fried rice and garnish with thinly sliced red chili if using and an extra sprinkling of chopped cilantro. Serve immediately.
