Tea Base
Spirit & Finish
Method
Tea Base
- 1
Brew tea
Brew very strong black tea by steeping 2 standard black tea bags (or 2 tablespoons loose leaf) in 2 cups of near-boiling water for 5 minutes. Remove tea bags/strain leaves and allow the tea to cool to room temperature (about 15–20 minutes) or chill briefly in the refrigerator.
- 2
Make mango purée
While the tea cools, peel and dice a ripe mango and blend until smooth to yield about 1/2 cup purée. If using store-bought purée, measure 1/2 cup and adjust sugar later to taste.
- 3
Sweeten & combine
In a small container or cocktail shaker, combine the cooled brewed tea (2 cups), mango purée (1/2 cup), granulated sugar (2 tbs), cold water (1/2 cup) and fresh lime juice (1 oz). Stir or shake vigorously until the sugar dissolves and the mixture is homogeneous. Taste and adjust sweetness: add up to 1 tbs more sugar if desired.
Spirit & Finish
- 4
Assemble the cocktail
Fill a tall glass with ice. Pour 4–5 ounces (about 1/2 to 2/3 cup) of the mango black tea mixture over the ice, leaving room for the spirits.
- 5
Add nightcap and optional rum
Top the drink with 1 oz nightcap liqueur and 1/2 oz light rum (if using). Gently stir once or twice to integrate the liqueurs without flattening the drink.
- 6
Garnish & serve
Garnish with a mango slice or lime wheel on the rim. Serve immediately with a straw or stirring spoon. Optionally provide extra lime on the side for guests to brighten the flavor.
