Ginger Syrup (makes ~1 cup)

Make ginger syrup
Combine 1 cup water and 1 cup sugar in a small saucepan over medium heat. Stir until the sugar dissolves. Add the sliced fresh ginger and bring to a gentle simmer. Reduce heat to low and simmer 10–12 minutes to extract ginger flavor. Remove from heat, stir in optional lime zest if using, and let the mixture steep for 20–30 minutes for stronger ginger intensity. Strain through a fine mesh sieve or cheesecloth into a clean jar, pressing the ginger to extract liquid. Cool to room temperature, then refrigerate. Syrup will keep 2–3 weeks refrigerated.

Lightly muddle mint
Place 6–8 fresh mint leaves in the bottom of a mixing glass or shaker. Add the fresh lime juice and ginger syrup. Gently muddle once or twice — just enough to release the mint oils without shredding the leaves.

Top & finish
Top with 2 oz club soda (or light sparkling water) to achieve a lighter body and effervescence. If using, add 2 dashes Angostura bitters on top to add aromatic complexity.

Garnish & serve
Garnish with a lime wheel or wedge and a sprig of mint. Clap the mint between your palms before garnishing to release extra aroma. Serve with a short straw.
