Prepare glass
Fill a highball or Collins glass with ice. Use enough ice to come near the top so the layers and chill are maintained (about 1 cup of cubes or crushed).
Add lime juice
Pour 1/2 oz fresh lime juice over the ice. This adds brightness and balances the sweetness of the ginger beer.
Top with ginger beer
Add 4 oz chilled ginger beer to the glass. Pour gently so it mixes lightly with the lime but still allows the rum to float on top when added.
Float the rum
Slowly pour 2 oz black (dark) rum over the back of a spoon held just above the ginger beer surface, or pour gently over the ice so the rum floats and creates the 'stormy' layered effect.
Garnish and serve
Garnish with a lime wedge or wheel on the rim (or a squeeze of the wedge if you like more acidity). Serve with a straw or stirrer so the drink can be mixed to taste by the guest.
