Prepare chickpeas
Drain canned chickpeas, reserving the liquid (aquafaba). Rinse chickpeas briefly under cold water and drain well. If you want an extra-smooth hummus, remove a few skins by rolling chickpeas between your fingers — optional but recommended for silkier texture.
Add garlic and seasoning
Add the peeled garlic cloves, ground cumin, fine sea salt, and black pepper to the tahini-lemon mixture. Process another 20–30 seconds, scraping down the bowl as needed.
Incorporate chickpeas
Add the drained chickpeas to the food processor and pulse to combine. Then process continuously for 1 minute, stop and scrape the sides, and process again for 1–2 minutes until fairly smooth.
Adjust texture
With the processor running, slowly drizzle in the 3 tablespoons of olive oil and up to 3 tablespoons of the reserved chickpea liquid (aquafaba) one tablespoon at a time until the hummus reaches your desired consistency — creamy and smooth. Taste and adjust salt, lemon, or cumin as needed. If thicker, add another tablespoon of aquafaba or water; if thinner, process a little longer.

Classic smoky
Spoon hummus into a shallow bowl. Create a shallow well in the center and drizzle with 1 teaspoon olive oil. Sprinkle smoked paprika and toasted pine nuts (or pistachios) over the hummus. Finish with a few pinches of chopped parsley for color.
Caramelized onion & za'atar
Fold the finely chopped caramelized onion into the hummus gently or spoon on top. Drizzle with olive oil and sprinkle za'atar and toasted sesame seeds. Garnish with parsley if desired.
Roasted red pepper & chili
Blend the chopped roasted red pepper into 1/4 cup of hummus for a unified red pepper hummus, or swirl on top for a marbled effect. Drizzle with olive oil and sprinkle Aleppo pepper or red pepper flakes for heat and color.
Sun-dried tomato & herb
Stir chopped, oil-packed sun-dried tomatoes into the hummus for a tangy, rich variant. Top with chopped fresh herbs and a drizzle of olive oil. Scatter toasted pine nuts or sesame seeds if desired.
Serving
Transfer hummus to a serving bowl, smooth the top with the back of a spoon and make a shallow swirl to hold the garnish and oil. Add chosen flavor/garnish per the options above. Serve with warm pita wedges or an assortment of crudités and lemon wedges on the side for squeezing.
Store leftovers in an airtight container in the refrigerator for up to 4–5 days. If the hummus thickens in the fridge, stir in a teaspoon of aquafaba or olive oil before serving to restore creaminess.
